Of course, serving invasive Louisiana wild boar sausage is the right thing to do to help save our wetlands, but when it taste as good as it does, there’s no tradeoff. It sells itself.

We use Charlie's Smoked Sausage all the time in our specials at Satsuma Cafe. They are a great addition to our Apple, Brussels Sprout and Potato Hash and we always sell out when they are in served in our daily egg scrambles. My favorite way to eat them though is grilled with some peppers and onions and Creole mustard on a toasted Ciabatta loaf.

We use Charlie's Sausage at the restaurant in our gumbo cause it freaking rules. I love it on my breakfast sandwiches at home, where it's been known to cure everything from hangovers to my dad's flu.
